Adios Peanut Butter Sheet Cake
Ben leaves for a trip to Baltimore for Avery this week and so our plan is that workout starts for us on Monday when he is back. I stepped on the scale this week since way before the holidays and discovered I gained 2 lbs from holiday eating. Ugh, not so bad I guess. I just need to go back to normal eating and working out on a regular basis and I should be back to my goal quick. I'm not too obsessive about my weight so that isn't such a big deal to me, as long as my clothes still fit. TONE, TONE, TONE and be HEALTHY!!
I discovered Whole Foods grocery store and I just have to say, I'm in love!! When can I go back. I've made salmon cakes, brown rice, salad for dinner this week and yesterday we had a yummy homemade pizza with whole wheat crust, spinach, mushroom and goat cheese pizza. Tonight I think we may have some sort of Teriyaki chicken with something and something...not well planned out today. But yum...can't wait to go back there to do some more shopping. Anyway..I just printed out my workout schedule for Ben and I and (gulp) this is not going to be easy. I can do this!!!
P90X2 Phases:
Phase 1 – Foundation, 3-6 weeksPhase 2 – Strength, 3-6 weeks

Phase 1 is basically core and balance to build a solid foundation. You’ll be building on this for the next two phases, improving your balance for that feared 4 ball pushup later on in the program.
Phase 2 will focus on strength and will incorporate the Shoulders & Arms and Chest, Back, & Balance workouts.
Phase 3 will focus on increasing your performance. This is when P.A.P. (Post Activation Potentiation) comes into play – PAP Upper, and PAP Lower. It basically consists of doing a weighted exercise immediately followed by an explosive exercise

Peanut Butter Cake
I saw this recipe on Pinterest. It was stuck in my head for 4 days before I had to give in and make it. It's baking now so I will let you know how yummy it is.
Peanut Butter Sheet Cake
Mix in pan and bring to a boil:
1/4 cup creamy peanut butter
1 cup water
1/2 cup butter
Sift the following and add to the above mixture:
1 cup sugar
1 cup brown sugar
2 cups flour
1 tsp salt
1 tsp soda
Mix and add to the above mixture:
2 eggs
1/2 cup buttermilk
1 tsp vanilla
Stir well and pour into greased or parchment lined cookie sheet pan (jellyroll pan). Bake for 15 minutes at 375 degrees.
Frosting
Mix in pan and bring to a boil:
3/4 cup butter
6 Tbsp buttermilk
1/2 cup peanut butter
Take off stove and add:
3 1/2 cups powdered sugar and 1 Tbsp vanilla. Pour over warm cake.

Back to the Workout
Ben and I are going back to Mexico in April which means a swimsuit is in my future. Don't want to lose any weight but toning up would be nice. We have been having a hard time getting back to doing our workouts since spring. We started back doing P90x briefly but then quickly got distracted with it during the holidays. P90x 2 came out in December so we just ordered that up and will beginning that a week from Monday. It will be nice to switch up the workouts and do something new. Hopefully we won't get so bored. Looking forward to it. Ready, set, GO!
Collin Update: Turned 17 months and we are 4 steps closer to walking. He is FINALLY showing interest in walking and can stand and walk to you. Hopefully soon we will have a walker on our hands.
Tayah got a horse. No..but our neighbors behind us did. The fence butts up to our property so it is just like having a horse without all the care. WINNING!! Here are some pictures of Tayah visiting the horse.

Cabin Weekend
We had a wonderful New Years weekend at the cabin. We even got a little
